What made you decide to become a burger maker?
“I have been flipping burgers since my high school days and always had a love for making yummy burger creations. Our diner highlights some of the most delicious inventions that I have created and I don’t plan on stopping anytime soon, with a few more ideas up my sleeve!”
What did your introduction to burger making look like?
“I started quite young, as an eager 14 year old, being introduced to the skills of the trade, working in many Brisbane city burger chains, and developed these skills moving into other kitchens and falling in love with the hospitality industry.”
What did you do before this?
“I have always been surrounded by and worked for the hospitality and food industry, however changed it up a touch, working in the civil construction trade for a bit.”
What does your day-to-day look like?
“I’m up at the crack of dawn, like many parents, juggling my 3 beautiful children, with the working day commencing after school drop off. Not only am I heavily into the kitchen during the day, but the day to day running of the caravan park also takes up a lot of my time.
With our Bulk Water Delivery Service, I sometimes am required to jump in the truck to deliver loads of fresh drinking water to local properties.
“During our busy season over Summer, we not only juggle our children but over 100 international backpackers that stay with us for the Harvest Season. My day starts from 4am delivering workers to farms, back into reception to cook in the diner, attending to caravan park duties, then collecting the workers late in the evening….. sometimes I’m looking at a 14 hour day!”
Do you have a favourite product, or one you are most excited about?
“My Chilli is my most prized creation. Without giving away too many secrets………this dish involves up to 17 hours of smoked beef. You can taste the Chilli on the Chilli Dog, Chilli Cheesy Chips and even the La Bamba Burger, and it never disappoints.”
Do you have a favourite tool in your trade, that you just couldn’t live/work without?
My Burger Turner, AKA BIG spatula!
What do you wish everyone knew about your products?
“We have recently been named ‘Best Burger’ and ‘Best Takeaway’ in the Granite Belt area by polls conducted by The Border Post. Our burgers are delicious, affordable and you won’t leave our diner without feeling satisfied. We are also one of the very few, that are open 7 days for lunch, along with our Friday and Saturday nights.”
When you’re not making burgers, what do you like to do out and about on the Granite Belt?
“It’s tough to go out and about when you are an owner operator and open 7 days, however we try to go out as a family as often as possible, and eat at the many other family friendly restaurants in town. And with 3 young ones under 8 years, taking walks along the bike path at Quart Pot Creek and the Skate Park is a favourite for our kids.”
Where you’ll find Brendan…
“You will always catch a glimpse of me, either in the kitchen or at the front desk, and even on the road driving our water truck.”
