Chocolate Maker (and Christmas Store & Cafe Manager) GRANITE BELT CHRISTMAS FARM

Location: Stanthorpe, Granite Belt Wine Country, Queensland

Katrina makes a beautifully handcrafted Belgian Chocolate Range to melt your taste buds – available at the Granite Belt Christmas Farm.  

When did you begin chocolate making?

“In 2017 I bought my first tempering machine out of America. Having always had a passion for cooking, I took one chocolate class then started flying solo in the chocolate world. I wanted to create my own style and started doing flavours of slabs.”  

What made you decide to become a chocolate maker?

“I wanted something to compliment our Christmas Shop and what better than indulging in Belgian Chocolate.  I wanted to offer a unique product to the Granite Belt Region. Being a region that produces beautiful food, I thought it would be great to offer chocolate.”  

What did you do before the Christmas Farm and chocolate making?

“For 10 years I was in Hotel Management, then did further study to teach Tourism, this took me to outback Queensland where I met my husband, Brad.”  

What does your day-to-day actually look like?

“My day starts early in the Kitchen getting all the produce cooked for the shop, then it’s up to the house to get the kids ready for school, from there it is back to the farm to serve our amazing customers!”  

Is there a product you are most known for?

“My Macadamia Rocky Road and Hot Chocolate! Customers think it’s the best Hot Chocolate they have ever tasted.”  

Do you have a favourite product?

“It would be the Hot Chocolate, I wanted to give people a true feeling and experience of Christmas and what better way giving them.”  

Do you have a favourite tool in your trade, that you just couldn’t work without?

“Whisk, everything I make needs whisking.”  

What do you wish everyone knew about your products?

“We are the location to get the beautiful Christmas Trees.  I’d love people who haven’t had a real Christmas Tree to experience a true Christmas with the scent of pine in your house.”  

When you’re not busy at the Christmas Farm, what do you like to do out and about on the Granite Belt?

“If we have a babysitter it would be treating ourselves to Essen’s Restaurant!”  

Where you’ll find Katrina

On a visit to Granite Belt Christmas Farm most days you’ll meet Katrina in the Christmas Store serving customers, while husband Brendan Fraser is busily about the farm, often seen tending to Santa’s animals or caring for the thousands of Christmas Trees.
